Made Spaghetti Bolognese last night and I had some left over Bolognese sauce so I thought I'd save it for lunch. I didn't feel like having pasta again. So I thought why not make an omelette!
I found some canned sweet corn in the pantry so I made a sweet corn omelette and topped the bolognese sauce over it. Super simple to make and you don't have to go out and buy anything! Well besides sweet corn if you don't have any at home :) So keeping my food budget in mind I'll jot down last night's pasta meal and today's lunch :)
Spaghetti Bolognese
1 LARGE can of diced tomatoes - $1.50 (on sale)
$3 of mince beef
No. 3 Spaghetti (because we like thin ones and not the thick spaghetti) - $3.5 a pack used half so $1.75
1 clove of garlic, 1 chopped onion, oregano, bazil - had at home
Total: $6.25 with left over pasta sauce!
Sweet Corn Omelette with left over Bolognese Sauce
for 2
Free ranged eggs x 8 (4 for each omelette) - $4 for a box of 12 therefore $2.70
Canned Sweet Corn (Snack sized) x 2 (1 for each omelette) - $3 for 4 cans therefore $1.50
Left over Bolognese Sauce - $0!!! :D
Total: $4.2 for a fulfilling lunch!
